This meal is easy to prepare, and very tasty.
Can be cooked on the BBQ as well.
However this teriyaki marinade is great for
chicken wings, or even as a stir fry sauce.
INGREDIENTS (Serves 4 Little People)
1 Chicken Breasts, each cut into 4 long strips
or 4 Chicken Tenderloins
4 Small Skewers, soaked in water for 10 minutes
Marinade
6 Tbsps Soy Sauce
3 Tsp Sesame Oil
3 Tbsp Rice Wine Vinegar
6 Tsps Runny Honey
1 Garlic Clove, crushed
1cm Ginger Piece, grated
To Serve
1 Tsp Sesame Seeds (optional)
1 1/2 Cups of Rice, Cooked
1 Bunch of Broccolini, steamed
METHOD
Mix all marinade ingredients together in a non-reactive container large enough to hold all of the chicken skewers.

Thread the chicken onto the skewers (I thread mine on like a snake), then submerge them in the marinade, cover, and refrigerate for at least 30 minutes.

You can then either preheat the grill or BBQ and cook for 5 minutes each side.
Or alternatively, you can preheat the oven to 190 degrees Celsius. Place the skewers on a lined baking tray. Sprinkle with sesame seeds, and bake 20 minutes or until chicken is cooked through.
Serve skewers with rice and steamed brocollini. (or vegetable of your choice)
